BREAKFAST WRAPS

3/4 lb sausage, crumbled
4 green onions, sliced
2 apricots or peaches, pitted and sliced

4 burrito-size flour tortillas

In a greased medium skillet over medium-high heat, cook sausage until browned, stirring to break up. Drain meat and wipe skillet of excess fat. Return meat to skillet; add onions and fruit. Cook another minute and remove from the skillet. Again, wipe skillet with paper toweling. Spray skillet with nonstick cooking spray and add the eggs. Cook eggs, stirring constantly until thoroughly cooked. This will take a couple of minutes. Heat tortillas by wrapping in paper towels and heating for a few seconds in microwave. 1 cup fat-free milk
1/4 cup orange juice

In a blender container, combine all the ingredients, cover and process until smooth. Pour into chilled glasses and serve immediately.

Easy to Grow Summer Flowers

Late spring is the perfect time to plant seeds for easy to grow summer flowers. The soil needs to be warm enough for germination and the spring rains will help the seedlings get going.

Summer annual flowers include zinnias, sunflowers, cosmos, petunias, bachelor buttons, balsam, alyssum, marigolds, vinca, poertuluca, lobelia to name just a few.

Flowers need at least six hours of full sun to bloom profusely. In very hot areas such as the Southwest and desert areas, afternoon shade is appreciated.

Prepare the soil by digging down at least six inches. Turn the soil over with a shovel. Add compost or well rotten manure and a time release fertilizer per the package directions. Turn the soil over again to mix in your ingredients.

If your flower bed is up against a wall or fence, plant the tallest flowers in the back, medium tall in the middle and short or spreading flowers in the front. The tall flowers can use the wall to lean on and won't shade the shorter flowers.

If your flower bed is in the middle of the yard, plant the tall flowers in the center, surrounded by medium tall flowers and then ringed by the shorter and spreading flowers.

Throw caution to the wind and plant a splashy mix of all different colors, much like you'd find in a meadow. Or plant in coordinated colors. All pastels are very pretty. Pick a two bright opposing colors like red and blue and fill in with plenty of white. Orange and purple work well too with lots of white or cream. Or pick all shades of the same color like blue and then use a pop of yellow every once in awhile.

Plant seeds three times as closely as the seed package says. That gives you extra seedlings because you'll lose some to the birds and bugs. Cover the seeds as directed and then add a layer of mulch on top. Water thoroughly. Only water when the soil looks dry not on a schedule. Too much water can be as bad for baby plants as not enough water.

After the seeds have sprouted wait until they have at least four true leaves then thin to the desired spacing. Shorter flowers can be spaced to six inches apart. Medium flowers can be 12 inches apart and space tall flowers about 18 inches apart.

One of the nicest things about summer flowers is that the more you pick them for bouquets the longer they'll stay in bloom. The purpose of a flower, from the plant's point of view, is to set seeds. Once that's done the plant will stop blooming. If you remove the flowers the plant will keep on blooming.

After the first rush of blooms cut the flowers back by about half and you should be able to force a second bloom. It won't be quite as extravagant as the first bloom but will still be lovely.

Late spring is the time to plant your summer flower seeds for an extravagant display all summer.

Bring to a boil, reduce heat, and simmer uncovered for 15 minutes. Place chicken on top of sauce, cover pan, and simmer 15 to 20 minutes, until chicken is cooked through. Serves 4.

Emeril's dry rub

1 roasted red pepper peeled seeded and chopped

3 cl garlic crushed to a paste

3 tb olive oil salt and pepper

Chicken

1 fryer cut into 8 pieces

1/2 c mustard sauce

2 c flour

2 eggs lightly beaten oil for frying

For the dry rub: in a food processor, combine the peppers, garlic and olive oil, puree until smooth. Season with salt and pepper.

For the chicken: completely coat chicken pieces with the dry rub. Place on a baking sheet and allow to sit for 20 minutes.

Evenly coat each piece of chicken with the flour. Dip each piece in egg, removing any excess liquid. Turn back into flour, coating each side well. Fill a skillet with oil 2 inches high. When oil is hot, carefully lay the chicken in the oil, do not over crowd. Fry until golden brown, about 8-10 minutes. Turn the chicken over and continue cooking until done. Season with essence. Serve with mustard sauce.

This list of components is for the deluxe version-the automatic hot dog turner is a cool novelty, but not essential as it is just as easy to turn by hand! If you want to make a simpler cheaper version, substitute the plywood for card, the plastic mirror for tin foil, and rather than have a motor turn your hot dog on a skewer, just provide support for the skewer and do it by hand!

First of all we need to construct the parabolic mirror. The parabolic mirror collects all of the solar energy and focuses it onto our hot dog.

Have you ever tried bending a glass mirror? It doesn't work, the least you will end up with is seven years bad luck, and at worse you could end up with bloody hands.

Here we have a couple of options, the "quality-built-to-last" option, and the "cheapskate" option. The quality-built-to-last option involves buying some flexible acrylic mirror from the internet. This is often seen on auction sites in large panels as people use it for interior design, and can sometimes be found in garden supply stores as people put it at strategic locations in their garden in order for it to appear bigger.

The acrylic mirror can be bent gently without fear of breaking, and also has the advantage that it can be drilled relatively easily without fear of splintering.

If you are opting for the cheap option, you can get away with using some corrugated cardboard, covered in glue, followed by tin foil. Note that your collector efficiency will not be as good, as the surface is not as reflective. However, for a demonstration it works to a degree.

Next, you need to construct a support for the mirror - if you are building to last then use plywood and framing. A router might be useful to machine a groove which will support the mirror, if you are making the cheaper cardboard version; you just need to cut some flaps to support the "mirror".

Now we come to the drive mechanism. You can just provide a simple support for a skewer and turn your hot dog by hand.

Alternatively, if you are feeling really adventurous, you can construct a solar motor, which will turn the skewer of your hot dog automatically!

You will need

• 1381 IC
• 2N3904 transistor
• 2N3906 transistor
• 3300 µF capacitor
• 2.2 k resistor

• High efficiency motor

The circuit for the solar motor is a simple circuit and can easily be assembled on stripboard. Once you have constructed the solar motor driver circuit, you are going to need to mechanically couple the motor to the skewer. You may find if your motor is powerful enough, that you can directly drive the skewer-it would be worth investigating bearings to ensure that your skewer turns as freely as possible with a minimum of resistance. It you find your motor struggles to turn the skewer, and then use a "worm drive" to reduce the speed of the motor-while increasing torque.

When you have a busy schedule it's not always easy to find time to shop for, prepare and cook hot, healthy meals with fresh food. I've certainly found that anyway. Rather than go down the microwave ready meal route I've got a few favourite easy recipes that I make if I haven't got much time and the ingredients are usually already there in my cupboards. Following you will find my 3 favourite quick and easy recipes:

Spaghetti And Cheese On Toast

My scary ex mother in law introduced me to this snack. It's hard not to think about her when I prepare and eat it but it hits the spot and tastes so good that the memories fade into a delicious oblivion.

Ingredients:

Tin of Spaghetti or Spaghetti Hoops - whatever size or brand you prefer. I use Heinz.
Bread For Toasting - I use wholemeal but any will suit
Cheese - Cheddar is best and I use low fat
Spread - Optional but I use low fat.

Method

Lightly toast your bread and at the same time heat the spaghetti up, but don't overheat. Grate enough cheese for your needs. Put a thin layer of spread on your toast and then cover with the warm spaghetti. Cover the spaghetti with grated cheese and then pop under the grill until the cheese is melted to your taste. Transfer to a warm plate and eat.

That's a really quick, filling and easy recipe and you can either make it as a snack with one round of toast or a meal with 2 rounds of toast.

Jacket Potato With Tomatoes, Cheese & Onion

After I got divorced I was broke and needed to add cheap but nutritious meals to the menu, and as I was working 2 jobs the meals had to be quick to prepare and energy giving. This was one of the cheapest meals that I made and it never got boring.

Ingredients:

Large Baking Potato
Tin Of Plum Or Chopped Tomatoes
Small Very Finely Chopped Onion Or Dried Onions
Grated Or Crumbled Cheese - whichever you prefer

Method

Either bake the potato for 50 minutes or microwave for 7 minutes. Slit the cooked potato open and place the onions in the slit. Cover the onions with cheese and pour the tomatoes on top. Place in microwave and cook on full power for 3-4 minutes.

I've sometimes added cooked, sliced mushrooms instead of or with the onions, or used low fat cheese slices instead of grated cheese. I also use baked beans instead of tomatoes on occasion.

Really Super Noodles

I experimented and added to a tip in a magazine for this quick meal.

Ingredients:

Pack Of Bachelors Barbeque Beef Super Noodles
Tin Of Plum Or Chopped Tomatoes
2 Cooked Sliced Sausages
Dried Onions

Method

Break up and place the noodles in a pan with the included flavouring. Add a small amount of dried onions and add the tinned tomatoes instead of water. Stir and keep stirring while bringing to the boil. Simmer for 2 minutes and then add the cooked, sliced sausages. Simmer for another couple of minutes and your very quick meal is ready.

The beauty of this recipe is that you can experiment with different ingredients and still get a tasty meal. For instance sometimes I add pre cooked beef strips instead of sausages, or I use chicken flavoured noodles and pre cooked chicken strips and leave out the onions.

Health & Diet

I suppose that it depends how you look at it, or how you prepare the meals whether you think they are healthy or not. The meals have varying amounts of carbohydrates, protein, calcium and iron and we need them all to live.

Are they fattening? Rigid dieters might say yes but I don't think so as long as you don't over eat and you swap ingredients for low fat alternatives. In fact I have included these meals when dieting and lost weight while feeling well and healthy.

Quick and Easy Fudge Pie

When is a brownie not just a brownie? When it's a Quick and Easy Fudge Pie, of course!

But when you get a hankering for something just a bit more "fudgy" than a regular brownie, make this Quick and Easy Fudge Pie, which is a cross between a regular brownie and creamy chocolate fudge. It's even delicious enough to serve to company if you dress it up a little (see note below).

QUICK AND EASY FUDGE PIE

1 c. sugar

1/4 c. flour

4 heaping Tbsp. cocoa or 2 sq. chocolate, melted

Blend above ingredients, then add:

1/2 c. melted butter

2 whole eggs

1 tsp. vanilla

Pour into greased 9 inch pie plate. Bake at 350 degrees for 25 to 30 minutes. Cool. Place in refrigerator before serving. Makes 6 to 8 servings.

NOTE: Dress up each serving of pie with a topping of ice cream or whipped cream and a fresh berry or a few chocolate chips for garnish. Make swirls of chocolate syrup on each plate and lightly dust the whole serving with a little sifted cocoa powder.

For a hot chocolate brownie sundae, heat some hot syrup. Top a slice of brownie with a scoop of vanilla ice cream, then pour hot chocolate sauce over the ice cream and sprinkle on a few pecan pieces.

My Famous and Easy to Make Sweet Potato Pie

The smell of a hot fresh sweet potato pie on Thanksgiving is one of the best smells in the world. I've always looked forward to homemade pies on the holidays. It's my favorite dessert besides banana pudding. If this is your favorite pie and you don't know how to make it. This recipe is the easiest to follow. If you just want to impress someone with some homemade cooking my recipe will win the award. The ingredients are very simple and inexpensive. Hope you enjoy and are looking out for more of my recipes. With this recipe you can make three sweet potato pies. You will need:

• Five large sweet potatoes


• 1 cup of flour


• 2 cups of sugar


• 3 eggs (large)


• TBSP of cinnamon and nutmeg


• 1 stick and a tbsp of butter


• TSP of salt


• Three original pie crusts.


• Large bowl

First rinse potatoes with warm water. Get a large pot and boil water, put the potatoes in the boiling water and let boil for about at hour and a half. Until tender. While the potatoes are cooking turn the oven on 300. Sit the butter out on counter to soften. Once potatoes are done, let them cool off.

Peel all the skin off of the potatoes. Put them in a bowl and smash them with a potato smasher whisk or whatever you have. Try to get it creamy like mash potatoes. Add your butter, eggs, nutmeg, salt, cinnamon and a cup of sugar. Add in a half of cup of flour and stir. Then add the rest of the flour, mix well. Taste and see if it's tasting like that good old sweet potato pie. If you need more sugar add it. Adjust to your taste; add a little more of each to get that taste you want if needed.

I don't believe in measuring, I'm good when it comes to putting in the right amount of ingredients. It runs in my family. We all are great cooks and soul food is our specialty. All you need when it comes to making home cook meals is the right amount of love and soul that's the secret to great cooking. Now, that the entire pie filling is ready you are ready to fill in your pie crusts. Pour filling into to the pie crusts. Do not over fill, leave enough room inside the crust so that the pie will rise and not drip out of the pan inside the oven. Directions

Preheat oven to 350 degrees.

Grease a 9-inch pie pan. Over medium heat, melt the margarine in a skillet. Add in the bell pepper, green onions, and the garlic. Cook for 2 to 3 minutes, stirring constantly, until vegetables are nice and tender.

Stir in flour and bell pepper and let cook for 1 minute. Gradually add in the milk. Cook mixture until it boils; stir constantly. Next, mix in the parmesan cheese.

Remove pan from heat and fold crab meat into mixture. Pour mixture into the greased pan and sprinkle the cheddar cheese on top.

Bake for 10 to 15 minutes until completely heated. Serve with crackers or toasted bread rounds.

It has been said that changing one's mind is a woman's prerogative. However, I don't think the author of that statement anticipated how often women would change their mind on what to fix for dinner during the course of a day. When I leave work, I go by the store and think about stopping--but alas I am too exhausted. I justify that I can just "throw" something together from the pantry. (I ignore the fact that my last five attempts to throw something together have ended up in the garbage, untouched.) I get home only to scour through the pantry and learn that I can make spaghetti and meatballs--if only I had spaghetti; macaroni and cheese--if only I had cheese, chicken with lemon and rosemary--if only I had the chicken. What's a girl to do? And of course, you know how this story ends, the famed call to the takeout joint up the street.

One of the best techniques I've found to simplify supper is to simply assign each night a "theme." Now, some of you may be organized enough that this isn't necessary, but for those of us who have found all-too-much comfort in the cardboard of a takeout box, this is a winning strategy.

Making Swimming Pools Safe For Everyone is Easy

Few things go together as well as the warm months of summer and swimming pools, but safety should always come first with swimming fun.

For children aged one to fourteen, drowning is the second-most common cause of accidental death. Safe Kids USA, a child safety advocacy group, reports that 280 children under 5 years old drown every year in swimming pools across the country.

The Right Equipment

Instant Hot Water - Cheap and Easy

Instant hot water has a lot to be said for it. Not having to stand around waiting is one. Saving tons of water is another. Instant hot water can save you time water and energy, and along with those savings are other less tangible benefits. Reduced green house gasses are released into the atmosphere when you use less water since it requires energy to pump and process water before it gets to your home, and then again as sewage. If you have a septic system it can extend the life of your system. If you are on a well, your pump won't have to run as much.

There are a variety of systems on the market today that are designed to get you faster hot water. There are different views on just what "instant hot water" is. Some people say that you have to be able to get hot water within a second or two after turning on a tap. With most of these systems there is definitely a waiting period, which usually occurs before you turn on the tap, so not all people view all of these systems as producing "instant hot water".

For our purposes we shall define "instant hot water" as that which arrives within a few seconds of turning on the tap even if you had to wait before turning on the tap.

One way to have instant hot water is to circulate the water in a big loop from the outlet of the water heater, past each fixture, and on back to the inlet of the water heater. In my opinion this is the only way to really have "instant" heated water. You walk up to the tap and turn it on, and within a second or two it's there.

At first this sounds like a great idea, but after closer scrutiny it becomes obvious that this system is not so great after all. It is an energy hog! What you end up with is a giant heat radiating system that keeps the water heater working harder and more often to keep this big piping radiator hot. Even if you insulate the heck out of the pipes, the surface area to volume ratio insures that you will consume a huge amount of energy. Energy to heat water is much more expensive than the water that is being heated.

These continuously circulating systems also suffer from breakdowns due to the fact that heated water tends to form sediment even while being circulated. This sediment gets deposited on the surfaces of the pump parts and pipes forming clogging deposits which cause breakdowns.

Continuous circulating systems won't work with tankless water heaters. This is unfortunate, since tankless water heaters take longer to get the heated water than normal plumbing systems. More wasted water is the result.

Grundfos and Taco are two manufacturers of continuous circulating pumps and systems.

An alternative to the continuous circulating systems are the temperature controlled circulating systems that use the cold water piping as the return line back to the water heater. Like the previously discussed system, the hot water gets circulated in a big loop from the water heater, past the fixtures, and back to the water heater. The pump is usually located at the fixture furthest from the water heater, and the inlet connects to the hot pipe and the outlet connects to the cold water pipe With some systems the pump can be located at the heater, and just a valve at the fixture.

Since you obviously don't want your cold water piping full of heated water, the pump has a temperature sensing circuit, and the circuit shuts the pump off when the water gets up to about 95 degrees at the pump. The pump turns back on when the water temperature cools down to about 85 degrees. This means that when you turn on the tap you don't have to wait as long for the hot water to reach you since the pipes aren't as cold and won't suck the heat out as much as cold pipes would and so you get hot water more quickly. It certainly isn't instant though.

These "luke warm" systems as I call them also waste a whole lot of energy since they keep the pipes full of partially heated water. They don't use as much energy as the standard circulating systems, but they still use much more energy than a normal plumbing system uses.

Again, as with the previous types of systems the luke warm systems will not work with a tankless water heater. They pump water much too slowly to activate the tankless water heater's flow switch, and so they would just circulate cold water around and around.

Manufacturer's of the luke warm systems include RedyTemp, Laing, Grundfos and Watts.

The good news is there is a type of system that gets you fast hot water, doesn't run water down the drain, doesn't use more energy, and even works with tankless water heaters. In addition it is inexpensive and easy to install. The type of system I am talking about is a "demand system". When you "demand" heated water, by pressing a button, the pump comes on and pumps the heated water to your fixture rapidly. As with the luke warm systems, the pump is located at the furthest fixture from the heater, and connects to the hot and cold lines.

Instead of being temperature controlled though, the pump only turns on when you turn it on. It has a temperature sensor built in, and when hot water reaches the fixture the pumps shuts off. At that point you have instant hot water when you turn on the tap. Since the heated water was not circulated, you did not use any more heat energy than if you had a normal plumbing system. Since the pump only runs for a few seconds each time, it only uses a dollar or two per year in electricity costs. If you have a system with a powerful pump like the Chilipepper CP6000 pump, you can get your water much faster than normal. The CP6000 pumps up to 3 gallons per minute, and many fixtures limit flow rates to less than one gallon per minute. So you can get your heated water up to three times as fast. And what you get is hot water, not luke warm water.

The demand type systems do not seem to have any drawbacks. They get you your hot water faster, saving you time. They don't use more energy than a standard system. They are inexpensive, or at least some of them are. And some of them work with tankless water heaters as well. As long as the pump is strong enough to turn on the heater, it will work.

The Chilipepper pump has the strongest pump on the market and will turn on any tankless water heater. Metlund makes several models, and not all will work with a tankless water heater so if you have a tankless water heater check with the manufacturer to make sure it will work with your model of heater.

Demand systems are typically inexpensive, the least expensive being the Chilipepper at about $180.00, and Metlund with several models under $300.00. Taco also manufactures a demand system very similar to the Metlund D'mand system. Often you can install them without even turning off the hot water to the house, just turn off the angle stops under the sink where you are installing it. You will need a 110 volt outlet to plug the pump into.

If you decide you are interested in a demand type system check with you local water company, as several water companies around the country offer their customers rebates of up to $200.00 for the installation of such a system to conserve water. So be green, help out the environment, and stop waiting for hot water.
